Gluten Free Blueberry Muffins With Lemon

Gluten Free Blueberry Muffins that Warm You!
What you will need:

10 tablespoons of butter
1 cup of sugar
zest of a lemon
2 large eggs
3 cups of gluten free flour blend (as pictured above)
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups plain yogurt
1 cup fresh or frozen blueberries, or any berry you would prefer. 

Method:

In a bowl, cream the butter, sugar and lemon zest together until well blended.  Add the eggs one at a time and mix after each one. 
Add a cup of the flour along with the soda, baking powder and salt and mix well, then add 1/2 of the yogurt and mix just until combined.  Then add the rest of the flour and the rest of the yogurt.  (works better in these stages)

Stir in the berries

Using a non stick spray of your choice, spray the muffin cups, and then fill with the batter, and bake for 25 - 30 minutes at 375 degrees.  Let cool and enjoy!
