Gluten Free Stuffed Chicken

Gluten Free Stuffed Chicken Breasts - taste great!
What you will need:

6 boneless chicken breasts
1 tablespoon of butter
2 cups of rice or gluten free rice cereal
1 teaspoon garlic salt (you can add a touch more if you love garlic!)
1 egg
1/2 cup of milk that you can tolerate
6 thin slices of ham (one for each chicken breast)
6 slices of thin provolone cheese (one for each chicken breast)
1/2 cup of a gluten free flour blend
meat mallot or rolling pin or something similar and some agression!
food processor
tooth picks (to hold the chicken together)

Method:
Place the chicken breasts between saran wrap or similar and then on a firm surface start pounding them to about 1/2 inch thick, or even down to a 1/4 inch if you can.

Grease a large baking dish using the butter, and preheat the oven to 375 degrees.

Using a food processor, crush the rice cereal with garlic salt until the texture of fine flour.  Then in a small bowl, beat together the egg and milk. 

Now comes the fun part of putting this all together!  Lay out a piece of ham on each chicken breast and then a piece of cheese.  Now roll up the chicken as tight as you can and then using a tooth pick secure it.

Roll each of these chicken "rolls" in a bit of the gluten free flour, and then in the egg mixture, then into the crushed rice cereal (using flat plates for the cereal works well and makes it easier to roll)

Put these chicken rolls into the large baking dish and bake for 40 minutes.
