Gluten Free Waffles
Gluten Free Waffles - You can make these ahead of time too!
What you will need:
2-1/4 cups milk or alternative
1 pkg dry yeast
1 teaspoon sugar
1 teaspoon salt
1/2 cup butter
2 cups gluten free sandwich bread mix (as pictured above)
2 eggs beaten
1/4 teaspoon baking soda
2 teaspoons vanilla extract (optional)
large container with tight fitting lid
waffle iron or griddle
Method:
using a saucepan on the stove, warm the butter and milk on med heat, just until the butter melts.
When milk and butter are luke warm, you then add the yeast and the sugar. You don't want the milk and butter too hot, you are looking for a temp. of about 105 degrees, so as not to kill off the yeast.
Let the mixture sit for about 5 minutes, the yeast will bubble.
Find a large container with a tight fitting lid, and pour this mixture into the container, add the salt and flour mix until smooth (use a whisk).
Cover with the tight fitting lid and leave on the counter overnight (do not refrigerate) it must be at room temperature.
The next morning when you are ready for waffles, preheat the waffle griddle, and then add the beaten eggs, baking soda and vanilla to the mixture.
Take about 1/2 cup and spread on the griddle and then bake until golden, these are amazing!
You can keep the remaining batter in the fridge for 3 days, but you most likely will not have any left!
Tips: You can cook up all the waffle mixture, and save any uneaten waffles to toast in a toaster oven for a later snack, don't throw them away. This can be your own version of "frozen waffles".
