No Noodle Lasagna - Zucchini Makes This Amazing!
No Noodle Zucchini or also known as Zucchini Lasagna
What you will need:
zucchini
grated cheese of your choice
1/4 cup olive oil
small onion finely chopped
garlic
celery stalk chopped
one carrot chopped
pinch of salt
large can or 32 ounce can tomatoes
8 ounce can of tomato paste
Method:
Saute the oinion, celery, carrot and garlic in oil until soft, then add the canned tomatoes and tomato paste and simmer until thick (on low for about an hour) and season to taste.
To prepare the "noodles" (zucchini)
Wash then dry the zucchini, and then slice it lengthwise leaving skin on, then place on a baking sheet that you have sprayed with non stick cooking spray, and leave in oven for a couple of hours at 180 degrees. This will help to draw out the moisture.
In your lasagna pan or casserole dish, put a layer of your sauce first in bottom, and then add a layer of zucchini, then a layer of your grated cheese, more sauce, then more cheese and bake at 350 degrees for about 45 minutes.
The zucchini will have the texture of lasagna noodles, making this a great gluten free dish, with lots of veggies. You can experiment with different cheeses that you can tolerate.
